Lanzhou beef noodles are defined locally by five elements — clear broth, white radish, red chilli oil, green coriander and yellow noodles — and shops are judged on all of them; the dough is pulled by hand into a chosen thickness from thread to belt. The city stretches along the Yellow River in a narrow valley, and the Silk Road ran through it.
