Peru
Peru supplies the atlas with the clearest demonstration of Andean verticality — communities holding land at several elevations at once and moving produce between their own floors. Cusco was the centre of that system and the Spanish built directly on top of it, which two earthquakes have since tested: the Inca courses did not move. Lima sits in a coastal desert that receives almost no rain and has the most argued-about cooking in the Americas.
