Taiwan enters the atlas twice and both times through food, which is unusual enough to be the note. Tainan was the island's capital under the Dutch and then the Qing and keeps the oldest street food culture in a country that treats it as heritage; Taipei adds a museum holding the imperial collection that left the mainland in 1948. The pair supply a Chinese inheritance preserved outside China and a night-market cuisine that is documented rather than merely eaten.
