Spain
Spain enters the atlas through three separate inheritances that rarely appear in the same country. The Islamic centuries left Córdoba, Granada and Seville with buildings that were mosques, then cathedrals, and are described here as both. The empire left a grid plan exported to the Americas and the archives that recorded it. And the twentieth century left a food culture that reorganised European cooking from a small Basque city.
