Oaxaca state has the greatest ethnic and linguistic diversity in Mexico — sixteen recognised indigenous peoples — and the city is where their markets, textiles and food meet. Mezcal is distilled from agave in villages within an hour, mole negro takes upward of thirty ingredients, and Monte Albán, the Zapotec capital, sits on a levelled ridge above the valley.
