Bamberg was built on seven hills in conscious imitation of Rome, and its cathedral holds an equestrian statue whose subject nobody has identified in eight hundred years. The town survived the war almost untouched, and its rauchbier — malt dried over open beechwood fires, giving a taste of smoked ham that takes a pint to get used to — is brewed in only a handful of places.
