Sarlat was decaying in the 1960s until it was chosen as a pilot for the Malraux law on historic quarters, and the restoration that followed made it the model for how France treats old towns — nearly seventy protected buildings in a few hectares of golden limestone. The Saturday market is the region's centre for foie gras, walnuts and, in winter, black truffles.
