Founded in 1471 as a fortress against the Portuguese, Chefchaouen took in Jewish and Muslim refugees from Spain, and the blue wash is variously credited to them, to mosquito repellence and to tourism — the honest answer is that it spread in the twentieth century. Climb to the Spanish Mosque for sunset over the whole bowl, and buy the goat cheese the Rif is known for.
