The anchovy sauce fermented here in wooden barrels carries a protected designation and supplies a large share of what the country cooks with, and the island's black pepper is sold by the estate the way wine is. Cambodia claimed the island until 1949 and it lies far closer to the Cambodian coast than to the Vietnamese one, which is visible from any map and rarely mentioned on any brochure.
