Michel Guérard opened here in 1974 and two years later published the method that became cuisine minceur, cooking for people taking the waters who could not eat the food that made his reputation. The village registered itself as France's first village minceur on the strength of it, which makes this the rare address whose claim is a technique rather than a building.
