Fifteen thousand people live in this valley of the northern Black Forest and two of its hotel dining rooms have held three Michelin stars, which no settlement of comparable size anywhere has managed. The kitchens came out of hotels rather than restaurants — Traube Tonbach and Bareiss are family houses that took in walkers first and cooked seriously afterwards, which is the reverse of how such places usually begin.
