Chiang Mai

Chiang Mai was the capital of the Lanna kingdom for five centuries and kept its own language, script and cooking — khao soi, sai ua and nam prik ong are northern, and the food is milder and more herbal than the Bangkok version that travelled. The old city sits inside a square moat, and three hundred temples stand within the province.
