Portugal held Goa from 1510 until 1961, and Panaji's Fontainhas quarter keeps the ochre and blue houses, the tiled street names and the Latin street plan intact. Old Goa's basilicas stand eight kilometres east, where a city of Lisbon's size stood before cholera emptied it, then eat a Goan fish curry that carries both coasts of the trade in one bowl.
