Lima

Lima was the capital of Spanish South America for two centuries and sits in a desert that receives almost no rain, watered entirely by rivers from the Andes. Its cooking combines indigenous ingredients with Spanish, African, Chinese and Japanese immigration — chifa and nikkei are distinct cuisines — and several of its restaurants are regularly ranked among the world's best.
