Jerez de la Frontera

Sherry is aged in a solera: barrels stacked in tiers, with wine drawn from the oldest and replaced from the one above, so that no bottle is a vintage and every bottle contains a little of everything since the system began. Jerez is also one of flamenco's cradles, and the horses of the Royal Andalusian School are the third local institution.
