San Sebastián has among the highest concentrations of Michelin stars per inhabitant in the world, and the pintxo — a bar snack on a slice of bread, originally free with a drink — evolved into competitive miniature cooking along the streets of the old town. The gastronomic societies, private clubs where members cook for each other, have existed since the 1870s and mostly still exclude women from the kitchen.
