Salta kept its colonial centre when Buenos Aires rebuilt itself in French stone, and its cathedral, cabildo and low arcaded streets belong to the Andean north rather than the pampas. The Tren a las Nubes runs from here, but better still, drive the Quebrada de Humahuaca and the Cafayate wine road, where high-altitude Torrontés grows at two thousand metres.
