Shaoxing wine is fermented from rice and aged in clay jars, sometimes for decades — a jar is traditionally buried at a daughter's birth and opened at her wedding. The town is threaded with canals crossed by stone bridges and black-awninged boats, and Lu Xun, the founder of modern Chinese literature, was born here and set his stories in these streets.
