Yangzhou grew rich on the salt monopoly and the Grand Canal, and its merchants built gardens to rival Suzhou's — He Garden and Ge Garden are the survivors. The city's cooking is Huaiyang, one of China's four great traditions, prizing knife work above heat; a chef demonstrates by cutting a block of tofu into a thousand threads that unfurl in water.
