Tainan was the island's capital under the Dutch and then for two centuries under Chinese rule, and it keeps the oldest temples, the first Confucian academy and a food culture that Taiwanese treat as the standard — danzai noodles, coffin bread, milkfish soup for breakfast. Portions are small because the expectation is that you will eat at several places in one evening.
