Fukuoka's yatai are open-air stalls that appear at dusk along the Naka river and pack away by dawn — around a hundred remain, the largest concentration in Japan, and the licences are so scarce that they pass within families. Tonkotsu ramen, made from pork bones boiled for hours to a milky broth, was invented here.
