The 1889 fire destroyed Seattle's business district, and the city rebuilt one storey higher to solve its tidal sewage problem — the original street level survives underground and can be walked. Pike Place Market has traded since 1907, Boeing and then Microsoft and Amazon made the region's fortunes, and the coffee habit began at a single stall in the market in 1971.
