The Strait of Malacca is the shortest sea route between India and China, and the sultanate here taxed everything that passed until the Portuguese took it in 1511, followed by the Dutch and the British. Each left a layer — a Portuguese fort gate, a Dutch red town hall, British shophouses — and the Peranakan community that grew from Chinese-Malay intermarriage left the food.
