Britain held Menorca for most of the eighteenth century and built Mahón around one of the deepest natural harbours in the Mediterranean, leaving sash windows, gin distilling and a claim on the invention of mayonnaise. The island is a UNESCO biosphere reserve, which is why its coast has coves rather than towers: walk the Camí de Cavalls, the 185-kilometre bridle path around the whole shore.
