Chaozhou

Chaozhou gongfu tea is brewed in a pot the size of a fist and poured into three thimble cups in continuous rotation so that each is equally strong — the ritual is domestic and constant rather than ceremonial. Teochew cooking travelled with emigrants to Bangkok, Singapore and beyond, which is why its cold crab and oyster omelette are found across Southeast Asia.
