The Hôtel-Dieu was founded in 1443 as a hospital for the poor and endowed with vineyards, and its wines have been auctioned each November for over 160 years to pay for the charity — the sale still sets the tone for the Burgundy vintage. Beneath the town run kilometres of cellars, and the Côte d'Or's climats, individually named plots, are a UNESCO site.
