Safranbolu was a stop on the caravan route to the Black Sea, and its eight hundred timber-framed Ottoman houses survived because the nineteenth-century railway passed thirty kilometres away and prosperity left with it. Sleep in a restored konak and cross the bazaar of blacksmiths and saddlers, and buy the saffron that gave the town its name.
