The Romans cut chalk from pits beneath Reims to build the city, and the crayères they left — constant at ten degrees and ninety per cent humidity — turned out to be perfect for the second fermentation that makes champagne. Thirty-three French kings were crowned in the cathedral above, and the cellars below now hold the reserves of Ruinart, Taittinger and Veuve Clicquot.
