White truffles grow wild in the hills around Alba and cannot be cultivated, which is why they are hunted at night with dogs and sold at an October fair where prices reach thousands of euros a kilo. The fair draws everyone, but the reason it exists is better: the Langhe hills, hazelnuts, tajarin pasta and the Barolo villages twenty minutes south.
