The old town sits on a limestone island joined to the mainland by a bridge, walled against corsairs and packed with Baroque churches built on olive-oil money — Gallipoli exported lamp oil to half of Europe from cellars cut into the rock beneath it. The beaches north and south are the reason Salento fills in August, but the island itself stays a working fishing town.
